The Pinot Nero Sanct Valentin Riserva di San Michele Appiano was obtained from 100% Pinot Nero grapes grown in the territory of Appiano on the Strada del Vino, in the province of Bolzano. Here the soils are composed of moraine deposits and limestone gravel and are located at an altitude between 400 and 550 metres above sea level. After a cold pre-maceration lasting 3 days, the must was subjected to alcoholic fermentation in steel. After the malolactic fermentation, useful to soften the structure and the aromatic profile, the wine is aged for 70% in barriques and for 30% in large barrels. After blending it ages for a few more months in large barrels.
The Pinot Nero Riserva di San Michele Appiano appears of a ruby colour, the nose is expressed with intense aromas of cherry, violet and seductive balsamic notes and dark spices. Complex and elegant, on the palate, it reveals a smooth tannic texture and an exhilarating gustatory balance. The finish is long and persistent. At the table, it goes well with cured meats and aged cheeses as well as first and second courses prepared with white or red meats or game.
