The Pinot Nero Germogli Bianchi di PINOT NERO GERMOGLI BIANCHI MONSUPELLO: LA DEGUSTAZIONE Pinot Nero Germogli Bianchi di Monsupello is a slightly sparkling white wine made from the vinification of Pinot Noir without contact with the skins (88%) and Chardonnay (12%). The grapes come from vineyards in the first hilly area in the municipalities of Oliva Gessi and Torricella Verzate, whose soils are clay-limestone. The fairly young plants, about 15 years old, are carefully tended with a manic focus on the vegetative-productive balance through careful winter pruning, the elimination of excess shoots, cluster thinning, and land cover cropping. The grapes are pressed and destemmed, with immediate separation of the skins from the juice; the must, clarified and transferred after about a day, is fermented in stainless steel tanks at a controlled temperature of 18°C. After further transfers and stabilizations, the wine is added with sweet must and selected yeasts and refermented in autoclave, then microfiltered and bottled. The final residual sugar content is 9.5 g/liter.
The Germogli Pinot Nero in white from Monsupello is straw yellow with bright greenish reflections. The nose focuses on fruit, especially currants and green apple, and white flowers; the palate, enlivened by delicate effervescence, is soft, fresh, with good salinity, and consistent with the olfactory profile. An original wine, it is a perfect opener, paired for example with the legendary Russian salad.
