The Il Moro di Valle dell'Acate is one of the labels of the interesting project "7 Lands for 7 Wines". Valle dell’Acate has always been committed to environmental conservation: it experiments with production methods based on sustainability principles, uses irrigation systems that maximize water efficiency, avoids waste, and works to requalify the surrounding territory. With the project "7 lands for 7 wines," it has associated 7 native grape varieties with 7 different types of soil on the property, matching each grape with the most suitable soil, in search of a high and distinctive expression of the territory. This vineyard, approximately 20 years old, planted with Nero d'Avola, named Il Moro di Valle dell'Acate, is located 120 meters above sea level with very dark, almost black soil, of medium texture tending to compact with a good presence of small dark stones; we are in Contrada Bidini Soprano and Sottano. The grapes are vinified in steel, then the wine is aged partly in steel, partly in wood, and then for a long period in the bottle.
The Nero d'Avola PLACEHOLDER_WINE exhibits a bright ruby color with luminous garnet reflections. On the nose, it is particularly expressive, with notes of blackberries, raspberries, and sour cherries merging with the Mediterranean shrubland, mace, and cocoa bean. In the mouth, the tannin is significant and well integrated into the balance of salinity-freshness-fruit. Perfect with roasted Nero dei Nebrodi piglet, but also with medium to long-aged sheep cheeses.
