The Morellino di Scansano di Jacopo Biondi Santi by Jacopo Biondi Santi is produced from the vineyards surrounding the millennial Castle of Montepò. The grapes used are 85% Sangiovese and 15% Cabernet Franc. The Production Specification of the Morellino di Scansano di Jacopo Biondi Santi in fact provides for production based on Sangiovese grapes, integrated with up to 15% grapes from black fruit vines; in practice, this mainly involves traditional varieties such as Canaiolo, Ciliegiolo, Malvasia Nera, Colorino, Alicante, and more recently also Merlot, Cabernet, Syrah, and other international black grape varieties. After traditional red vinification, the wine matures for about 8 months in barriques.
