Jakot di Dario Prin?i? carries in its name, Tokaj written backwards, the reactionary act towards an international controversy that established that the original name of this grape variety can only be used for the production of Hungarian sweet wines. Jakot di Dario Prin?i?Jakot comes from old vines over 60 years old, planted on marly and sandy soils, with very low yields. We are in Oslavia, a land of borders and conflicts; since 1988 Dario has been cultivating about 7 hectares with the traditional grapes of Gorizia. The soils are composed of ponca and clays, the slope of the vineyards requires almost exclusively manual work, natural ground cover is maintained, and treatments are reduced to a practically homeopathic use of copper and sulfur. Following ancient tradition in these places, fermentations occur spontaneously in the cellar, with macerations of varying duration. In the case of this wine, 20 days in open wooden vats, without temperature control, minimal addition of sulfur, and with daily manual punch-downs. Aging takes place in large exhausted barrels for about 30 months, with spontaneous clarification by sedimentation, in steel tanks before bottling.
Jakot di Dario Prin?i? has an intense amber color. On the nose, it ranges from notes of ripe peach, to sweet scents reminiscent of stewed fruit and cinnamon, followed by ginger and cardamom. The palate is rich, fresh, and elegant, with perfectly integrated tannins. Excellent with fusion dishes, for example, with beef tongue taco or tonkotsu ramen.
