Elena Walch's Gewürztraminer is mainly produced from the Cashmere vineyard in Tramin (360 metres above sea level, on mixed soil, mainly calcareous) and from the Wadleith vineyard in Caldaro (340 metres above sea level, on soil composed of calcareous pebbles from the Adige, sediments of morainic origin and humus).Before fermentation, a 6-hour maceration is carried out on the skins. The grapes are softly pressed and the must undergoes static clarification. Fermentation takes place in steel tanks at a controlled temperature of 18° C (temperature control serves to ensure that fermentation develops slowly and constantly and that there are no fermentation blocks, with the death of the wine yeasts and the possible triggering of fermentation by other unsuitable fungi or bacteria; in the case of whites and rosés, it is also particularly important to preserve the aromas). The wine then ages, for a few months, on its own yeasts in stainless steel containers.
Elena Walch's Gewürztraminer enters the glass with a bursting bright straw yellow, with golden reflections. On the nose, it is typical and territorial, with hints of rose, yellow flowers, sweet spices, fruit in syrup. On the palate, it is elegant, structured and long, aromatically in line with the nose. Very good in the company of a prawn tartare.
