The Franciacorta Brut di Le Marchesine was obtained from Chardonnay, Pinot Bianco, and Pinot Nero grapes grown in the territory of Passirano, in the province of Brescia. The bunches, where the manual harvest took place, were transported to the cellar to undergo a white winemaking process, that is, without maceration of the must in contact with the skins. Alcoholic fermentation, which transformed the sugars into alcohol, took place in stainless steel at a controlled temperature. Subsequently, the “liqueur de tirage” was added, a solution of water, sugar, and yeasts useful for starting the second fermentation which results in the sparkling process. The latter, according to the rules of the Metodo Classico, took place in the bottle. Before being marketed, the Franciacorta Brut di Le Marchesine was aged for 24 months in contact with the yeasts.
The Franciacorta Brut di Le Marchesine presents itself with a straw yellow color brightened by a fine perlage. On the nose, aromas of yellow-fleshed fruit and white flowers emerge, joining timid citrus hints and fragrant notes of bread crust. On the palate, it is fresh and pleasant, enhanced by a clear minerality that lingers in the finish. It pairs well with fresh cheeses and vegetarian dishes as well as tasty seafood recipes based on white fish, shellfish, and crustaceans.
