The Etna Rosato Alta Mora di Cusumano is obtained from 100% Nerello Mascalese grapes raised in the Sollacchia area, a hamlet of Castiglione di Sicilia (CT), at an altitude of about 750 meters above sea level. After manual harvesting, carried out in the second decade of October with a yield of 70 quintals per hectare, the grapes are transported to the cellar and left to rest overnight to bring the temperature down to 10°C. The following day, the grapes are pressed gently to extract 40% of the must, which is then fermented in stainless steel at a controlled temperature. Before bottling, the Etna Rosato DOC Alta Mora by Cusumano has aged for several months on fine lees (residues from fermentation), enriching itself in terms of body, aromas, and substances.
ETNA ROSATO ALTA MORA CUSUMANO: TASTING NOTES
The Etna Rosato Alta Mora di Cusumano presents itself in the glass with a light cherry pink color. On the nose, it expresses enveloping scents of cherry and small red berry fruits intertwining with fragrant floral hints. The palate is full and pleasant, enhanced by a lively mineral freshness that lingers in the finish. On the table, it pairs well with cured meats, semi-mature cheeses, vegetarian dishes, and tasty seafood recipes based on white fish, mollusks, and shellfish.Product specifications
