The Crémant d'Alsace Brut di Domaine Allimant-Laugner is obtained from 60% Pinot Bianco, 30% Riesling, and 10% Pinot Grigio grapes grown in limestone and granite rich soils. The white vinification involved a fermentation phase initiated by natural yeasts. Once bottled, following the second fermentation, the wine rested on the lees for 18 months before disgorging. The liqueur de tirage dosage was 3g/l.
The Cremant d'Alsace from Domaine Allimant-Laugner presents itself with a straw yellow color with golden reflections enhanced by a delicate perlage. On the nose, aromas of yellow pulp fruit, white flowers, citrus zest meet chalky and bread crust notes. The palate is crispy and creamy, supported by a vibrant freshness and a clear mineral persistence in the long almond finish. Excellent as an aperitif, it pairs well with seafood appetizers and seafood first courses especially with shellfish.
