The Chardonnay di San Michele Appiano was obtained from 100% Chardonnay grapes grown in the territories of Caldaro and Appiano in the province of Bolzano, at an altitude between 400 and 500 metres above sea level. The vineyards of origin are exposed from South-East to South-West and insist on calcareous-gravelly soils and morainic sediments. For this young white, in addition to the alcoholic fermentation, a partial malolactic fermentation in steel was provided. Until the 1970s in Alto Adige, Chardonnay was used in small percentages in addition to Pinot Blanc. In 1982, the San Michele Appiano winery dedicated itself for the first time - with undisputed success - to the vinification in purity of what can be considered one of the most widespread and internationally famous vines.
The Chardonnay di San Michele Appiano has a brilliant straw yellow colour with greenish reflections in the glass. On the nose, it reveals aromas of apple, banana and ripe yellow fruit intertwined with clear mineral notes. The sip is full and intense, supported by a decisive fresh-savoury balance and a finish of good persistence. Excellent as an aperitif, at the table, it goes well with fresh cheeses and vegetarian dishes as well as exquisite seafood recipes based on white fish and shellfish.
